I know you guys have talked about choice cuts for beef, but what about pork? Is there such a designation for pork?

Nope. There are grades, but not USDA grades. Knowing what breed of pig and how it was raised is as good as it gets. Follow the dollar signs.

There are some heritage breed differences.
There are some suppliers that deal with certain groups of farms to buy certain age,fed,maintained hogs,and cut to their standards.
There are certain smaller cutters,mostly now bought up by the super producers,that have specs that may work for comps,etc.
As he says,follow the money.
You need to have a real need,to spend the money,for the small differences.
Now a couple grand,for 1/1000 of a point,it looks feasible.
