im in the middle of smoking a 4lb pork butt, its been in my 009 for 2 1/2 hrs, and the internal temp. of the meat is already at 138deg. it should take 10hrs but it looks like it will be done in 5. what am i doing wrong?
Keep an eye on it Dave. 4 lbs is small for a butt, but if you're cooking at 225Âº to 250Âº the temperature rise will stall out. Do a search of this forum on "plateau". I'm guessing you'll be looking at a few hours in the 165-175 range. Let us know how it turns out!
