You need the PB to go at least until it hits the plateau so that the smoke can be absorbed and the fat render a little.

If you want to spend up the time, then it's not Smoking. Do them at 250 if you need to do that.

There is ZERO issue of PB holding the juices. In fact, I don't think you need foil at all. I do PB all the time until the pull them and there's plenty of fat to keep them moist.

Not sure why you're asking, have you cooked some and been unhappy with the results or just thinking ahead?

PB's are pretty simple.
