At the end of last winter,AAHH started a thread about how to use any leftover pulled pork and we shared some pretty creative ideas. Cool

I always figure if I get some out of the freezer,it is an excuse for another cook.

The wife needed some jambalaya for a club this week,so we borrowed from Marcele Bienvenue[she put together rustic Cajun recipes for Emeril].

For you serious pork lovers,this is great comfort food. Big Grin

She found a couple of 1 lb.+ bags of pulled pork in the freezer[even though it had a little vinager and apple juice sauce on the pork].

She made up a traditional diced tasso and sliced andouille jambalaya with the rice cooked in it.

So as not to mask the flavors of the pulled pork,she folded it in after the rice had finished cooking.

Darn tasty. Big Grin

Anyone else come up with any good uses they'd like to share?
