Pork Butt Rub Question | Cookshack

Want to be a pork butt and start it tonight - how essential is it to the final product that you let the rub sit on it overnight. What if I rub and let set for a couple hours then smoke?

Terpys, You should be fine with just a couple of hours. I have not found much if any difference at all.

Not a big deal at all. Did a small butt spur of the moment last night to bring to a friend. Mustard and rubbed and let sit for an hour or so as I was getting the smoker prepped. Turned out great when I snuck a taste as I pulled it off this a.m.

Not a problem. Every once in a while I throw a butt in with just salt and pepper. Not been disappointed yet

You can always add a little rub to the mix while pulling.
