I have been smoking butts in my 008 for over 4 years. Yesterday, I put a 8.5 lb {Sams)in at 6:00 PM. The outside temp in Liberty, MO was 104 de, so as usual I set the 008 at 225 de, with two probes in the butt as usual. It generally takes me about 14-15 houes to reach my desired temp of 197 de. I checked it at 5:00 AM where the outside temp was already above above 80 de, and the butt had reached a temp approaching 200 de.
Question does the extream outside temp have an effect on the cooking time?

The ambient temp shouldn't have affected your cook at all. Not, just because of the super insulation CS puts n these things, but also because the ambient never got warmer than your thermostat setting.

Every piece of meat is different, and will finish at a different time. I can ALMOST bank on 1 1/2 hours per pound, but every once in a while I get a butt that takes nearly 2 hours to the pound.
