Well I broke in the smoker this weekend, and all I can say is WOW! It was an 8lb untrimmed piece of meat, it cooked for 12 hours, and still wasn't getting up to the tempatures indicated in the archives (180 to 205). In order to feed the starving faces around me, I final stuck it in the oven, for an hour. Even so it was the most tender, and juicy piece of pork I think I have ever had! Blew my mind, and the minds of my family.

Can't wait to do the briskett!

Smiler I did a 7 pound butt on saturday. Smoked on 225 for 10.5 hours then 250 for 2 hours. Used lots of 6 kinds of wood. Used dark brown sugar base and lots of all spices except no pepper of any kind cause of my wifes' stomach. It is wonderful and is all I have wanted to eat since the first bite. Oh yes, first I rubbed liberally with olive oil, then the spice rub, then put in fridge for 12 hours. Razzer
