Well I broke in the smoker this weekend, and all I can say is WOW! It was an 8lb untrimmed piece of meat, it cooked for 12 hours, and still wasn't getting up to the tempatures indicated in the archives (180 to 205). In order to feed the starving faces around me, I final stuck it in the oven, for an hour. Even so it was the most tender, and juicy piece of pork I think I have ever had! Blew my mind, and the minds of my family.
Can't wait to do the briskett!
