These were smaller than I normally buy, aprox. 2lbs each, however they were better than the larger ones I usually find. I bought these from the local meat market. A little expensive, but worth it.
These were rubbed with equal parts Head Country Championship rub, and Obie-Ques "sweet and heat" hot bbq rub. I'm liking Obie's more and more each time i use it. 2 hours at 225, and 3 hours at 200; 2-3 oz of apricot wood. So good and moist I don't even put sauce on them; I prefer dry ribs personally.
