New owner of m008. Had 8 1/4 lbs of pork ribs in the smoker for around 11 hours. I noticed the cookbook called for 3 to 3 1/2 pounds at 4 hours at 225 degrees. Thought I would just smoke them longer. The flavor was great and they were good, but maybe a little overdone. Still tender though. Was I wrong to smoke them that long? brand new at this and realize it takes practice. Just looking for some advice on larger amounts or smaller amounts on cook times and temperatures

Welcome to the group.

Most common advice from the forum will be to ignore the times in the book.

As for 8 lbs of ribs, was it about 3 racks?

Don't think they were done in 3 to 3 1/2 hours at 225, they needed longer to cook.
