After removing the skin from the pork, for pulling, seems like such a waste to chuck. down here fried pork rinds are very popular, has anyone thought/done/experimented with this? how about you iq?

It sounds very good to me. Smoked, then fried.

I guess you are talking about skin on shoulders or picnics?
Don't know how you are cooking,but if you can peel or slip the rind-throw it back in the cooker to smoke some more and see how dry it will get.
They can also be frozen and used to flavor beans,etc.

Seems like there used to be Bacon Rinds in the store - like pork rinds or chicharrons but smoked. Haven't seen 'em in a while, tho.
