Let your imagination be your guide.

If you are using herbs or something like jerk paste,you may have to run your injectible thru the blender or strain through a fine wire mesh.

Remember the syringe has pretty small holes and cold meat provides resistance.

If you are injecting for flavor,use a chicken type rub mixed with a little beer,wine,stock,apple juice,etc.

For moisture,melted butter,oil,and a liquid of choice to make it flow through the needle.

You could just pump about 1 cup of Smokin's honey brine into each yardbird.

A good Italian salad dressing,run through the blender ,is a pretty good place to start. Wink

I have had success with this Cajun Butter injection. Try to "powderize" the rub as much as you can..I use a mortar and pestle.

Just melt some butter and add the following rub. Keep the butter warm so you can dissolve as much of the rub as possible.

You can do this with about any rub you happen to like(I've posted a few below).

Cajun Seasoning

2 1/2 tablespoons Paprika
2 tablespoons Garlic powder
2 tablespoons Salt
1 tablespoon Pepper
1 tablespoon Cayenne pepper
1 tablespoon Thyme, dried
1 tablespoon Oregano, dried
1 tablespoon Onion powder

PREPARATION:
Mix together.

Makes about 2/3 cup.

Chef Paul's Chikky rub

1/4 cup Sugar
2 tablespoon(s) Paprika
1 tablespoon Onion powder
2 tablespoon(s) Seasoned salt
1/2 tablespoon Garlic powder
1/2 tablespoon Chili powder
1/2 tablespoon Lemon pepper
1 tablespoon Sage, dried
1/2 teaspoon Basil, dried
1/2 teaspoon Rosemary, dried
1/4 teaspoon Cayenne pepper

PREPARATION:
Mix and store.

4 teaspoons Chicken Seasoning
1 teaspoon Cumin powder
1 teaspoon Coriander powder
1/2 teaspoon Allspice
1/2 teaspoon Cayenne pepper
1/2 teaspoon Black pepper

PREPARATION:
Mix together.
Here is a Cajun Injection folks seem to like
2 cubes butter
2 tbs onion juice *
2 tbs garlic juice *
2 tbs worch.
2 tbs crab boil
1 tbs lemon juice
1 tsp cayenne
Heat and mix well
use for frying and smoking
* juicer works well here, mix some water with garlic to get the strenght you want.
