Pre-Skined Ribs

I just opened up a three pack of baby backs I bought at Costco. They were sealed in the vacuum pack as usual with the Swift name printed along the side. Goofy thing is, when I went to remove the membrane, someone had already done it. What's with this?

That's interesting that all three were already skinned. But I do have to say that it happens more with BBs than it does with spares. At least that has been my experience.

Don't complain or even point it out. They might charge you more per pound.

I recently had a similar situation. I bought a case of Baby Backs at Sam's and immediately prepped 12 slabs (4 vac paks). Oddly enough, 1 of the paks had all three slabs pre-skinned.
