I have been an avid fan of this site for many moons. Nice to know that there are so many who like to share their knowledge of Q'ing.

As a result of my wife defrosting one too many butts, I am doing 3 in a smokette today. That thing is crammed pack. After having the smokette for 1 1/2 years, this is the first time it has been pushed to the limits. So far temps are normal and other than one of them being jammed in the back against the wall they look like they will turn out ok (I took an early morning peek using the excuse of needing to spray some apple juice on them).

Once done I will notify the board of the results and if the lack of space effected the smoke. As I told my wife...with all of that butt there is a lot of junk in the trunk...er smokette.

PS. SmokinOkie's mopping sauce has become a favorite with friends!

Speaking as someone who has had 6 butts in my smokette on more than one occasion, I can assure you that you will not have a problem.

Do pay attention to your grease pan as it might overflow.

I would suggest that you not add any liquid to the smoker by spraying or mopping. In fact I would suggest that you open the door and air it out 2-3 times late in the smoke if you want any bark.
Funny you said that...now.

Not much longer till they are done. I haven't sprayed again, but I have opened just long enough to get moisture out so that there would be better bark. They smell great!

Will pull and then add mopping sauce to one pan of pulled.

Hunger is really kicking in now...

Thanks for the the knowledge that 6 will fit in...tightly.

Wow! How did you manage that? Small butts? My butts run about 7+ lbs. The most I've ever been able to fit in my smokette is 4 butts. Two per rack. I simply don't have the vertical room to use more than 2 of the racks.

Boneless butts. Thinner and moldable but about 8# each. You can actually do more than 6. Kind of like packing soft luggage in your trunk. I don't necessarily suggest this approach, but before I had a second smoker, and I needed to cook 250# of butts in 3 days, the smokette did the job.

Here's another time I fully loaded the 008 with bone-in butts. Nephew graduated last year from Duke and went to work on Wall St. You'll understand why I'm telling you this if you read the link.

All 3 butts turned out nicely. Two were real moist while the one in the back dried out some. To get around that I pulled the dry one and added Smokin's mopping sauce....problem solved.

Todd...that is hilarious about the pig. One of my coworkers is thinking about doing a goat for the 4th. Hope it doesn't turn out like that pig. At least I will have a brisket on the side....just in case.
