Hi Everyone..

I'm going to smoke my first bird tonight, 7lb. I have been reading the posts and have a bunch of good ideas. but, i have one question, is it best to cut the bird in half, and smoke on the center rack in the smokette, or what rack would be best.. This is the first thing i'm smoking in there....

Yeah, it "was" a Chicken, it was more Guard Bird than Yard Bird, it was HUGE.. I ended up cutting it in 1/2 before i got your post. I split it, 2 oz. of Apple, smoked @ 225 for about two hours (breast was @ 155), then thru it on the weber to crisp up a bit, check the temp was @ 160 on the grill, pulled it, let it rest for 10 mins, and we ate most of it. Saved the left overs to make some chicken salad for tomorrow!

I seasond it with CS chicken rub, it was excellent! thanks for all your help guys!

Glad to hear that it turned out good. It is not a big deal to cut them in half. I cook parts in my smoker all the time. Did some chicken legs the other night with chicken rub and apple wood. Then finished them on the gas grill, brushing them with cs sauce. Took them to the bowling alley and didn't even get one myself... Must have been pretty good.

Any way glad to hear yours turned out well.
