Just got my smokette II yesterday, was planning on having a BBQ last night anyway, but didn't want to take too long to cook the meat. Stuck some chicken in the microwave for 15 min. to partially cook it, and then put it in the smoker on 220F for about 20 min. After taking it out of the smoker, I finished it off on the grill, basting it with a modified version of Smokin' Okies Vinegar Mop. It turned out fantastic, everyone loved it.

Modification:

I found it to be a little too tangy, so I added 1 cup of ketchup, 1/4 tsp. garlic salt, and 1 tsp. season-all.

Only suggestion. If you don't give it long enough, you won't get much smokey flavor. I've got a simple chicken recipe below.

For yours, What kind of chicken? Hadn't tried the Vinegar that way, but thanks for the suggestion. I'll try some next time I make a batch. It's really good on pork since in the South of the U.S. pork in a Vinegar Sauce/Mop is a traditional recipe.

I think you'll bring us some good suggestions with variations on Q. Did you ever have any luck on Sauces? I seem to remember you looking for some.

Another simple chicken...
I'll take chicken wings, and chop them into individual sections. Sprinkle with some good simple CS Spicy Chicken rub and smoke for 1 hour. Take it out and if you want, toss it with some sauce of your choice.
