Do they have to be whole? I haven't really done a Cook and Reheat on Whole birds, so maybe someone with some experience will jump in.

The problem is that after cooking, you have a limited about of time before you need to get the birds torn about to prevent potential food illnesses.

What about carving up one bird, a section at a time while keeping the rest under refrigeration. Do you want one bird left whole for presentation? You can reheat the carved part to serve and keep the whole bird refrigerated. And carve the whole bird and reheat those portions as needed. If your friends are fast eaters, just warm it all up and watch them enjoy it! I'd carve both birds, put some dark and light meat onto each platter and warm a platter at a time. Keep a little broth handy in case you need it to remoisten.

North Pole Joe, I was the same way first time I read it. I just want everyone to remember those overseas doing their job, so we can have our freedoms. That poem is special to any of us who've done this. And so easy year, for the Holidays I just pass that message on to my Forum Family.
