Hi all. Just finished my first turkey breast (7.5#), 2oz hickory, 250 for 3-1/2 hrs to internal 157 and let it "rest" to 162. Boy was that ever goooooodddd!!! Except for the rubber skin, which we don't eat anyway it was perfect!

I do have a question. When you have leftover wood still in the tray, do you count that as part of the weight to use for the recipes? Count it as 1/2 or something like that? Is it still good to re-use?
