I wanted to get some opinion on reheating of spares. I am planning on smoking some spares tomorrow and refridgerating them when done. I was going to serve them the day after by reheating them on a gas grill with a thin finishing sauce ( no sugar but has honey in it)by direct heat grilling. Would this technique reheat them, give them a slight crust but not overcook them???

Thanks

I would recommend low to medium low heat. More than that and you run the risk of scotching any residual sugar from your rub. Watch them closely and flip them frequently. Don't apply the finishing sauce/glaze till they're almost done...for the same reason mentioned above. Once they're reheated, you can FTC them for an hour or so.
