Maiden voyage with the 050 today with just a single rack of spares, cut in half, and placed on 2 shelves. When I choose to do more racks (spares) and hang them, do I hang plump end up or down? Thanks much!

Does the 050 use the 14" x 14" racks? I would consider using a Cookshack rib rack vs hanging them. If you do hang, I'd suggest plump end up and hook them a few bones in so they don't tear.

Yep, just used the one chunk, which checked in about 2.3oz (I stuck it on a scale just to see). Yes, square racks.
The CS is mighty efficient with wood use and they always suggest to start light and work up.

Your smoker will produce a hefty amount of white smoke as the smoker and wood come up to set temp. It will last about an hour and then turn into blue smoke.
