Country Style Pork Ribs are pretty lean and lend themselves better to the grill. If you want to smoke some, try brining them like a pork loin, then smoke.

or....smoke them to an IT of about 95 degrees, then grill them...

FYI just in case you don't know, country style ribs are actually sliced PB.
