My wife just returned from the Cayman Islands and brought back some various jerk seasonings. I have some baby backs thawing for tomorrow and thought I might try some out. Normally I use CS rub or my own homemade rub. Am I crazy or have some of our forum members had any success they can share?

Incidentally, she left me home here in Minnesota with the dog, but I'll let her get by with it this time. She was attending her son's wedding, Dr.Dick who posts here occassionally.

Smokin, I tried your recommendation and increased the rub on each of the three sections of baby backs. I love hot food, but I must admit that the one with the most rub was hotter than a freshly defrocked fox in a forest fire.

Also, there is a post going close by regarding timing on baby backs. For the fun of it I tried the 2-1-1 method. They turned out just great, except that I should have fixed more.
