Others are surely better equipped to answer your question in more detail, but, the quick answer is 'less.' The trimmings don't have the advantage of bone, nor as much connective stuff to render out, and thus become done quicker, dried out faster, and though tasty, can quickly become more like jerky than succulent rib meat. If it's already too late, chop 'em up, freeze 'em and make baked beans with them. mmmmm
