HI, I AM GOING TO BE SMOKING RIBS SATURDAY AND I HAVE SOME APPLE WOOD BUT IT WAS JUST CUT, DO I NEED TO SEASON THE WOOD FIRST OR CAN I USE IT LIKE IT IS? I WAS AFRAID WET WOOD MIGHT GIVE OFF BAD TASTES, ANY THOUGHTS? THANKS
It must be dry. Green wood gives a very bitter flavor (no good)!! I see you live in Weymouth. There is a place in Littleton , MA that sells 35 lb. bags of apple, oak, hickory, etc.. I like to get the wood from cookshack, because the wood is cut into small chunks for you ( i am a little lazy!!) But if your in a jam I can find the name of the store in Littleton!
