Cabela's just emailed and said the Smokette has been shipped!!!!!

Does it matter what type of wood I use to cure the smoker?
Is oak OK? I have a lot of oak and this way I can save what CS sends for the good stuff.

I have a 10 pound box of PORK BRISKET BONE RIB TIPS in the freezer.

I am open to any and all suggestions.

How to? Amount and type of wood? Time?

My smoker is 2 weeks old and I just did my first ribs. Sprinkled with CS Rib rub, put in fridge for about 18 hours - I'm sure less time is fine, but overnight is good. Cooked 1 1/2 slabs at 225 degrees for 5 hours with 2 1/4 oz Apple Wood. After that, I lightly brushed them with CS spicy bbq sauce, wrapped in foil and cooked for about 40 minutes. I only did that because I needed some time to cook other things.. DOn't think it was necessary, but they were great. Next time I will do less wood...like 1 oz probably, as I don't like the heavy smoke taste. What I've found is with all the talk about how to do it, it's pretty hard to mess it up. The CS just works great. I wouldn't cure the smoker with anything you wouldn't cook meat with, but I don't really know. You will need so little wood, it's probably not a big loss to use the CS wood they send for curing your smoker. While I used Apple Wood, I think hickory would be good too. Go really easy on the amount of wood!!
I'm thinking cookshack smokers must be THE BEST! I keep hearing "don't use too much wood". That sounds economically and environmentally friendly, doesn't it? We'll get to season ours this weekend, I hope. Please, no more hurricanes! We got a generator to pick up Saturday. Sunday, we plan to spend at the trailer, seasoning! It sure has been a long strange trip for us!

Wink Have 20 lb of spareribs in the Model 55 right now, with 4 oz of hickory. Three hours into the cook and eight more people coming for dinner. I will paint the ribs with chipotle BBQ sause as I take them out of the Cookshack. Also serving Calypso baked beans, also with three chipotle peppper cooked in and cooked in an iron Dutch oven. This is also my first cooking with the 55, hope I put enough wood in the box. We are celebrating not having a hurricane this weekend.
