You want to cool those puppies as quickly as possible... wanting to get temps below 70 in 2 hrs and below 40 in 4 hours more. Shouldn't be a problem. I have used the foodsaver, with good results. I would foil first for 30 min at least, just to get the same level of tenderizing going. Then I opened em up and let em sit for maybe 10 minutes... drops the really hot temp down a bit. Then into the foodsaver and into the freezer -- even if rather than keep em frozen I moved them back to the refrig cause I know I'll eat em within a week or so. Of course, the food safety guys would probably say don't put em in the freezer (drops the temp of everything else in there), but bag and put into an ice water bath first. Not a bad idea...
