Hi guy's , I've been asked to cook a small pig about 40/50#'s their looking for presentation more than anything. well since my pig smoker hasn't yet been built.
I'm wondering if I can either cook/smoke it on a gas grill or in my CS smoker? I also need to know how much cooking surface I would need for something that size ? Chet

chet: what they hey kind o' monster gas grill you got, dude??? I ain't seen the gas grill that can hold even a suckling pig... and unless you got a 250 or bigger, forget about the cs.

no... you gonna have to do like them good ole boys do in eastern NC: get you about 60 cinder blocks, stack em in a rectangle about 4 by 6 by three courses high... or better yet, just dig a pit in the ground... find a big metal screen to lay that bad boy on... and get you a couple weber kettles to burn down some wood, and take a sturdy shovel and feed coals under that hog, lay a big sheet of cardboard over the pig (take apart a big ole refrigerator or air conditioner box)... and tend it for about 12-14 hours... start it on its back and flip it over halfway through... and you will be the king!!!

Well can't do the pit thing there that's for sure it's a new restaurant and the have new concrete poured,The gas grill is big enough to do a suckling (stuffed) not split and the CS I have is a 103 ( 5 rack's) I can cook 60#'s of rib's on it !! I'm trying to talk him into doing pork butt's. But he seem's to be stuck on this presentation thing ! You know the new restaurant owner that doesn't know squat ! I wish I could do a pit thing or use blocks but I can't, I guess I'll have to resort to the redneck way and use a 275 gal oil tank and cook it as slow as I can?

chet: do you have a huge barrel smoker like you described... that would work fine... can you just rent a smoker for the event? Is the gas grill built into the restaurant? can you set the pig on it, run burners that are not directly under the pig, with a box for wood chunks and smoke, and cover it?
Well the barrel smoker I have (that's not reaedy yet..ha ha!)is 36" in diamiater I think it will be nice for a butterfly pig when I get it finished ? I plan on putting a smoke box at the end for flavor and using the gas fired cooker for heat: ie: cooking !
But like everything else it's not ready yet!, so I have to use a 275 gal oil tank my friend has and cook entirely with wood ! (altot of work) especially for a little pig ! I am building a pig cooker like I said
but I'm lazy and am looking for idea's before I start cutting the darn thing up !
If you have some idea's I'd welcome them for sure ! Like I said I have a round 36" barrel type tank that I want to be gas fired for a heat source and have a smoke box at the end for flavor... goood Idea ??? Let's not forget the fact you can pull up to someone's
house and turn the gas on ad start cooking !
