Being a new CS owner, I'm going to be preparing a pork butt shortly. I just put rub on the pork, and it's in the refrig waiting... while I want to start smoking about 24 hours after I put the rub on, I may not be able to do so for another day or two (schedule changes with the Ms.) - will this be a problem with the pork butt if it sits an extra day or two in the refrig? The expiration date on the package won't be an issue, but I'm concerned that the extra "sitting time" may dry out the pork during the cooking process or adversely affect the taste. While I hate to waste a cut of meat, I'd rather start over with a fresh cut...

Assuming that your rubbed pork butt is sitting in a baggy or wrapped in plastic, you shouldn't have to worry about it sitting for an extra day. I've done the same thing without any adverse effects.

For that matter, I'm not sure I can even tell a big difference between putting the rub on 24 hours in advance, and just putting the rub on directly before smoking.
