FYI I have found that by putting mustard on any meat, and than putting on your rub will help adhere the rub to the meat much better, thus not losing any of the rub.
Your absolutely right about the mustard helping the rub stick to the meat better. If you leave the meat to sit in the fridge for a while after putting the mustard and the rub on, it helps to form a sort of glaze over the meat.
