Salmon and pork tenderloin at same time ??

I wouldn't suggest smoking anything at the same time as fish.

Chunks are what the CookShacks are designed for, but chips and pellets are used by a lot of people. They just put them in foil pouches and poke a small hole in the foil.

Sorry, I missed the part about you using an offset. I cant give any advise on chips or pellets since I don't have one.

I would not use woodchips, sawdust or pellets in an offset. IMO I would stick with either wood chunks or whole logs. Are you using charcoal briquettes, lump charcoal or hardwood logs?

I use lump charcoals with usualy wood chips or chunks...

Tried the pellets today and it worked pretty fine!!!

did both at same time as a test...the pork does not taste fishy at all!!

Because your offset is larger and less air tight than my CS is probably why it worked.

I'm still never gonna give it a chance in my Smokette. I think it be like putting uncovered smoked fish in the refrigerator next to an uncovered white cake.

My opinion only though.

I was just making a test with the tenderloin...was not to serve for guest!!...

Now I have some nice coldcuts for my lunch next week!!

the pork sliced thin with "Moutarde de Meaux" and home made mayonaise between two slices of bakery bread!!! hmmmm!!!
