Anyone have a good recipe for Italian sausage and peppers (onions OK also)? The Smoke & Spice book has a recipe - it says to smoke the sausage for about two hours and the whole peppers and onions for about 50 minutes. Then remove the seeds and skins from the peppers and then slice the peppers and onions into the sausage. It sounds easy and good but if anyone has tried it or has a tried and trusted one they use, I would appreciate hearing it.

i worked on this recipe a month or so ago. one of my week end dinners.
one lesson i learned is that you dont want to smoke the peppers, if the sausage is smoked. thats too much collarteral smokage, with bad results. the best flavor profile can be acheived by smoking the sausage only. go ahead and julienne the peppers and saute with galic sauce or garlic butter. (and onions if you like) then add to your sausage. they will be happy together like peas and carrots..heehee
the smoke time for your sausage varies, depending on the sausage. just watch closely. make sure you cook over hot coals....hhmmmm

if smoking peppers, do them whole, and stuff them with some bbq and rice.....a little chili powder and cumin and onion....
i like to deseed and remove the tops first, to allow the smoke inside the peppers..
