I would not rub it down with oil. Just get fatty meats, could even be pork butts as they are cheap, and let it run. Make sure you foil the bottom of the FEC along with the heat shield. Some people also like to foil the roof over the fire pot and the grease channel the heat shield drains into. Oh, and don't forget to poke holes in the in the foil for the drain holes. Take it from experience on that one! Big Grin
