thanks guys for your replies. Sorry for taking so long to reply but was kind of overwhelmed with
smoking 150 lb. of brisket in the last two weeks
When thay asked me to do the meat for them, I was thinking maybe for 60 people. To my surprise, they said 200 poeple with two weeks left. Sheer panic
set in. So i just HAD!! to go and get my second smokette. Let me tell you they were smoking. Went to Sam's and got two cases of flats, smoked them to 150 degrees, foiled them, took them to 185-190 degrees, and refoiled them, slicing them the next day. They came out great. Served it in a hogie bun,with beans, cole slaw, chips,and brownie. The people raved about it. SO thanks to all you folks on this forum for all the help.
