Yup, I concur with everyone else. Get yourself a nice 8 or 9 pound pork butt, slap a good rub on it and put it in at 225 for 12 hours. Middle shelf. Let it run, do not open the smoker, just let her do her job. Put it in when you go to bed at night, next morning your place will smell like heaven. It'll take about 12 hours at 225 to get to 195. I like making carnitas for pork tacos with mine. WOW !!!
