Hi All, new year and this is my first post.
I have a problem when using my SM360...
For such a large smoker, the 2 small chimneys are just not large enough to let the smoke out fast enough. There just does not seem to be very good ventilation on it and the smoke inside sits around too long and becomes very bitter and stale, affecting the taste of the bbq. Do you have any tips or advice to fix this problem? Thanks in advance!

Like Okie mentioned, it is a well tested and widely used smoker. If your getting bitter tastes, you may want to let the wood burn off for 1/2 hour or so to get past the white smoke stage of burning, then load the smoker with meats.
