i stumbled accross a new flavorful smoke. just wondering if anyone else has done this.
i use apple, hickory, and mesquite combo. i like to go out and find the plume of smoke coming off my smoker and smell it. i will then determine if i need to add more of either wood to get the right combo. anyway, on the last stretch, i didnt use wood, i used the butts theirselves. placed them right over the disc i mounted above the burner. the fat was rolling off pretty fast and started to smoke like crazy! the aroma was unreal! people were coming from all over the neighborhood and wanted to know what it was! end result, more pronounced butt flavor
it was kinda like eating ribs in the form of a butt.. maybe next time i will put some butt fat in with the wood from the get-go. or would that be too much? also, has anybody found a use for all that black oil that comes out the drain pipe? maybe as fuel or something? it seems like such a shame to throw away all that crude (i throw out about 5 gal every 2-3 weeks). maybe there is a scientist somewhere who would like to experiment with it/////// Roll Eyes

Well, that would be the smell I get from my smokette.
Ever look at the foil that is above the smoke box? When the drippings hit that, they do some of that flare up in a different way.

I would love to find a way to capture that a little more. Like an IV drip on the smoke box from the drippings.
