Well, my first attempt at smoking in my new 25, and I sure am happy with the results. Used 4oz of Hickory, with 11 brats, and smoked for a little over 3 hours at 220. Used the meat probe, and was looking for 160. It got there too fast, so I knew they weren't done. Turned everything over at 168 and cooked for about another hour. I'm sure the brats were not thick enough for the probe to be an effective guide. Next comes about five pounds of ribs. Hope they turn out as well as the brats.
