Smoked Chicken and Potato Pancakes

1 c. leftover smoked chicken, cut fine
2 med. spuds, grated, rinsed in cold water and drained
1 small onion, grated
2 cloves garlic, minced
1 tbs. dried chives
3 eggs
flour and poultry seasoning...or Summer Savory
a big pinch of sea salt and tons of black pepper
goose fat, bacon fat, canola or olive oil...whatever your heart can take. I do goose fat whether I can take it or not!

Mix together everything but the oil, adding enough flour until you have a thick batter. Drop by tablespoons into shallow, hot fat, and fry until golden and a little soft in the middle. Drain on p. towels. Keep warm in the oven with a wooden spoon handle keeping the door open just a little to let steam out.

Serve with chicken gravy, white sauce with eggs and peas, cranberry catup/sauce, as is, applesauce, whatever turns your crank! Razzer
