We had a lot of 'extra' Roma tomatoes this year, after I got done calling 12 gallons of sauce and whole tomatoes I started drying them seasoned in the oven (ala sun dried tomatoes). Today I tried a variation ... I smoked the roma's (cut in half, seasoned with italian spices, garlic and salt) with hickory for 2 hours at 220f, finishing in the oven at 200f. They smell fantastic! Has anyone tried smoking tomatoes and drying? Be interested in hearing how you did it and what your favorite use for them was...
