I did 2 boston butts over the night of the 3rd. 2 7lb butts went in at 8:25 and came out at 11:30. Those bad boys pratically pulled themselves. I'll never buy a shank piece unless I have to. These guys were great and the cookshack was better performing than anything I own(well, I don't own the fiancee yet Razzer )

Out smoked everyone on the 4th.

True story on the butt... a brined butt
I did one for the 4th, and after bringing it in to wrap in foil, to let it rest, I went back to the smokette to close the door(so during the cool down nothing warps)when I got back to the butt my wife was already pulling it. So I quickly wrapped it in foil to save what was left to cool some. I think that half of being a good cook is to starve the audience properly... Big Grin
