There was an article this Sunday in the Tampa Tribune section on "History & Heritage" about smoked fish here in Florida.

It mainly concerns smoking mullet. Several "forum" years ago,

I think I posted the first pictures of a smoked mullet that I cooked(Smokin is it still available?)in a Smokette.

This Sunday, my local paper, the Tampa Tribune, had an article about smoked fish in the Tampa Bay area in the years after 1950. Sice I grew up in Tampa during this time, it struck a nostalgic bell with me, and, it includes a few "tidbits" about low and slow smoking that might be useful to us today.

I think it is interesting that they used wood for smoking that I have not found available today?

Maybe, this article will be of interes to you who want to smoke the fish mentioned in the article?
