I have been smoking king crab legs for a while. I'm sure smoked crab legs are not a new idea to many of you well-seasoned smokers, pardon my pun. I But I wanted to share my good results with you.
We were having some friends over, so I went to Costco and picked up a 10-pound box of king crab.
I use a knife to slit the softer underside of the leg sections a place that slid down in the smoker. My theory is this lets some moisture drain early in the smoke. Times I have not slit the legs or placed the slit up, there is some mushiness to the meat. It seems that the slit being down prevents this.
I place one chunk of Alder in my Smokette. Without preheating, I smoke the legs for one hour. This technique works whether you are smoking 2 or 20 legs.
I am not sure why someone would eat crab legs prepared any other way.
