A few weeks ago I did a nice big prime rib in my Smokette and it turned out magnificent !

I would like to try a couple of 1# bone-in rib steaks tomorrow.

I'm thinking of smoking them at a low temp (130 for perhaps and hour ??), and then finishing them med-rare on the grill.

Short of sticking the probe in edgewise, has anyone got any suggestions on temps/times ??

It may be hard to get your wood smoking at 130F unless you get it smoking at a higher temp first. I've done a few NY strip steaks that way. First I got my 008 smoking at about 250F then put the steaks in and cut the temp back to about 175F for about 25 minutes. Finished on the grill and they were great.

I forgot that the stuff I use 130 on, (jerky and sausages), all have cure in them.

I followed your directions ninety' and they turned out great.
Only had to grill them each side for a few minutes on 'high' to get them to med/rare.

I put some Club House Montreal Steak goop-rub on them beforehand and used about 2 oz. of maple.
Very yummy....
