First-year college student coming home for the weekend, his first trip back home. Having family and friends over on Sunday. Decided to smoke 8 lbs of chuck roast to just under medium (they're in the AQ now), then chill and thinly slice (with my meat slicer) for french dips or whatever. Gonna go to the bakery early Sunday for fresh french bread.

Isn't that what it's all about? Family, friends, food, and playing with our favorite toys??

Why chill and slice thin? The only issue is that it won't have broken down the collagen and be tender at that point.

I'd do that with some other cuts of beef, but chuckies are pretty good if you just keep on cooking. Just keep cooking until it's fork tender.

I like to smoke for 3 or 4 hours, then put in a pan in some beef stock and cover and cook until tender then shred. Sometimes, when I put it in the pan, I'll cut it into smaller chunks to allow it to tenderize a little easier.

I found that the meat is stiffer when cold and easier for me to slice. I have tried it both ways. Now, if I am using a commercial slicer it doesn't matter but on my cheaper home slicer I prefer it as cold as possible.

understand the method, just don't understand the reason.

Chuck is great to overcook until it's real tender. I don't like it or find it very tender when it's only cooked to medium.

For RB I'll do that with Round in big chunks.

But thanks for the method. Sounds good and it works well, so when you can't get a Round, maybe Chuck is a good alternative.
