didn't have plans to smoke anything this past weekend, but by Sunday, I was going through smoking withdrawl! Started going through the fridge looking for ANY meat like substance tho throw into the smoker and I came upon a Hebrew National kosher salami. I figured "what the heck". I scored it on four sides and put it in at 200* for four hours with 1.5 oz of Hickory. It came out a beautiful dark color and tasted awesome. the kids loved it and it was gone in minutes. It would be a great little appetizer or snack hot or cold. Just thought I'd pass it along.

Smoked Kielbasa (Polish Sausage) is also real good. 1 hour with about 1 ounce of apple or cherry does it just fine. Makes a great appetizer for your guests while they're waiting for you to come forth with the rest of the goodies. If it's not precooked sausage you'll have to cook it to about 165* internal.
