I know that smoking a stuffed bird is a dangerous practice, but has anyone tried to smoke the stuffing outside the bird, either on a shelf underneath to allow it to catch some of the turkey drippings, or alone?
Here is what I was considering.... Making the stuffing and placing it in my teflon coated triple baggette bread pan rolling it into 3 log shapes). this "pan" has thousands of small holes like a collander. I was thinking that when I take the bird out foil it and let it sit in the insulated cooler wrapped in towels, I could then put the stuffing in for a couple of hours at 250?
Any suggestions?
