Thanks for all the advice fellas, the smoker is on the way here. Now, what do I need to start accessorizing with?

Any good websites for spice blends for jerky?

How much of what types of wood should I order? I am willing to stock up now, because once I act surprised on Christmas...that thing will never cool off.

Easy does it you will get some wood with the unit and remmber a little goes a long way in a Cookshack.I keep hickory and apple I bought from CS and it covers anything I am cooking I am trying cherry on a ham right now. I mix them up and look around you might fine wood near you home I live in the south and have plenty of oak and pecan.You will need a Polder thermomoter or one like it kind with a cable I have found them at Home Depoy to Walmart.Anyway do search to find things there are topic here that will answer all your questions you just have to go through them .

My suggestions:

Keep a very detailed log of what you did, so you can repeat success and improve on mistakes.

Don't add to much wood. In a sealed unit like a CS, wood is not the source of heat, it's the source of smoke. A little goes a long way.

Pick something simple to learn on, master that. You need to learn the smoker and the basics before you move on to too many things.

I bought the sample pack from C.S. Came with Apple, Cherry, Hickory and Mesquite. See: (Sample Wood)

The unit comes with Hickory though. Oh yea, Good luck with the "wait till Christmas thing". I just recently got my Cookshack, but I couldn't wait...

You can always use it and put it back in the box, just don't clean that good 'seasoning' from the inside!
