I am just seasoning my new Smokette. I'm reading an internal temp. 30 degrees hotter than the dial reads. This is just a CYA question, but, are the recipes in the Cookshack Cookbook actual temps or according to their products dial. I am ASSuming that it would be actual temps, but again, CYA. Thanx, guys.

The temperature is going to fluxuate. At 225 mine will swing between 190 and 250. However, If you average it out over the entire cook time, it probably comes pretty close to the dial setting.

To keep the temp right at the dial setting, the heating element would be constantly turning on and off. This way there is less wear and tear on the equipment and I believe is also more cost efficient (my guess anyway). So just set the dial at the temp you want and don't worry, I promise it will turn out just fine.
