Rayl - I did something similar for a Memorial Day party to what you're doing, and agree with MaxQue.

I had 15 racks of baby backs that I cut in half and smoked in batches in my Smokette 2 days ahead of the party. I pretty much followed the Johnny Trigg method, and the comments offered by MaxQue, Pags, Ribdog, and others in a separate topic post, as my guide. Once the ribs were finished, I applied a light coat of sauce on half of them, left the other half plain, sealed them in foil, and refrigerated. To serve, I left the ribs sit on the counter for around an hour to come to room temperature, then into a pre-heated 250F oven for about 45 minutes.

The ribs turned out great with the bonus of probably being the easiest item I made for the party.
