I�ve decided to dust off my cookshack smoker and get it running after many years of non use. I don�t remember if I should soak the wood chunks first? Or put them in dry? Which way?
I do not soak the woood and I've had good results. The wet wood will help prolong the smoke but I prefer to get the unit smoking as fast as I can. How can you have so many posts and not have your unit fired up in years?
I do not believe soaking wood does any good. I have taken chips, weighed them, soaked them 24 hours, patted them to remove surface water, and weighed them. Net weight gain: 8%. Did the same with chunks. Weight gain was about 6%. My guess is that this small amount of water will evaporate in minutes. Surprising? Not really. Wood is not very pourous. That's why they make boats out of it!
They make boats out of wood because it is lighter than water therefore it floats. If not treated properly, the wooden boats will get waterlogged and sink to the bottom.
