Does anyone have a source or identifying product number for large beef ribs?

The other night on the Food Network show "The Best Thing I Ever Ate: BBQ", they showed the beef ribs from Daisy May's BBQ in NYC. I used to buy a similar product 15 years ago, but can't find them anywhere now. All I can find are the so called "shiners" that have little meat on them.

I don't need enough to raise my own cattle just to collect their ribs, but a national source via a food service supplier would be great.

Used to be a roast beef chain, called Victoria's Station?

They mainly served boneless rib roasts, ribeyes, etc.

They sold a rack of beef ribs, that they could carve off the standing rib.

They also contracted a major cutter to supply to their contract specs.

They are the last folks I've seen that could get quality,in quanity.

Matter of fact they had one in Lexington ,Ky ,years ago.

I'll be by it tomorrow-after I stop at my favorite poolroom for chili dogs. Big Grin

I'm still thinking Sysco might be a last resort.
